So, What's For Dinner?

Okay, I'm putting it out there...I'm SO sick of deciding what to have for dinner! I don't mind making the dinner, I'm just tired of coming up with ideas of what to have that my kids will actually eat! So, I'm asking for your help....give me some ideas....what are you all eating for dinner? Do you have some regulars that keep coming back that are always hits with your kids?

Here are our top five:

Meatballs with red sauce and rice (we could probably have these every night and the kids would be happy, but can you really do that?)

Chili with cornbread (but it's getting warmer, and chili doesn't always sound so good)

Spaghetti

Parmesan Chicken

I can't even think of a fifth right now I'm so burned out!

Help, please!

I have no clue how kid-aproved this is, but I love it. 1-dish Chicken and Rice. Double or triple this recipe for your family, it works for mabye 4 people with these numbers:

3/4 cup rice
1 cup cream of * soup (chicken, mushroom...)
1 cup water
4 uncooked chicken breasts (I like chicken tenders)
Paprika, salt, pepper to taste

Cover with tin foil, bake for 45 minutes at 375F. I like to add broccoli or canned green beans for color and a veggie.

I seem to remember not being a fan of caseroles as a kid, though. I liked having seperate courses, or dishes...just that you had a distinctly seperate main dish, another completely different vegetable, another side dish...so long as they weren't all blended together and tasted all the same. It's not that the food couldn't be touching, just not all mixed together. Ok, end comment (sorry to hijack your blog postings).

I have a whole list somewhere (still packed away somewhere) of go-to meal ideas, but here are a few that I can think of off the top of my head that are super easy and my kids will eat (usually)...

1. crockpot shredded chicken w/BBQ sauce served on buns (or french rolls) with oven potato chips (like Mo's)
2. chicken, broccoli, rice-o-roni- and cheese skillet meal
3. sloppy joes
4. frozen Stouffers lasagna- meat or veggie (the veggie is surprisingly tasty and kid friendly).
5. grilled cheese sandwiches (or quesadillas) and soup
6. Trader Joes chicken chow mein (in the frozen section in the black bag)
7. mushroom soup and bacon wraps (sounds funky, but oh so yummy- it used to be one of my favorites growing up!).

If you want any more detail on any thing, let me know. If I come across my list or think of anything else, I will pass it along! I have still been loving dream dinners for this exact reason- I have the hardest time thinking of dinner ideas! I imagine it would be even more difficult with 5 little ones to please! Good luck!

ah, this is where i def. would be lacking in skills but i do have a favorite for the kids its chicken and white rice, and you put cream of chicken on top (the one in the can) so boring but the kids love it. i guess it's kind of like mae's but less fancy! i'm comming back to this post though to get more ideas from your readers!

This is my problem every single day. But I'm so overwhelmed and bored by it all that I can not even think of anything right now. My kids are big fans of the chicken with the soup on top, served with rice. They will all eat that happily once a week. Homemade chicken noodle soup with grilled cheese is also SO easy and everyone will eat it. If you use a rotisserie chicken that makes it that much easier. Chicken stir fry. You just buy a bag or two of the frozen stir fry veggies, cook some chicken season with salt and soy sauce or teriyaki sauce. Whatever you like. Try a baked Ziti. My kids like it. Darin hates it. That's it. I hate this issue more than all the others. I can think of all kinds of delicious things to eat, but am so offended when it reaches the table and everyone says they'd rather eat cereal. I will NOT miss this phase of life!!

What about quesadillas (try different kids like chicken, cheese and bbq sauce or refried beans and cheese or black beans, corn and cheese, etc) or tacos or burritos? Those are always yummy.
And then there's always chicken roll ups - did your kids like those?
And what about french bread pizza? We love that.
If I can think of more I'll let you know.

Thanks everyone for all your comments...I had forgotten about the soup on top of rice. We have those often, but add cheese, pineapple and chinese noodles. Yummy!
My kids don't normally like casseroles, but this week I was going to make hamburgers with tater tots and ran out of time. So I made a tater tot casserole instead and they all loved it! Odd.
Annee, I agree, nothing worse than going to all the trouble to make a nice dinner and having people make faces and say "yuk, what is that?" How do you make baked ziti? Sounds good to me...why doesn't Darin like it?
